SOHO, MANHATTAN

Dominique Ansel Bakery

Birthplace of the Cronut — and the rest of the pastry case is the real argument.

Dominique Ansel's Spring Street bakery is where the Cronut was invented in 2013, and a decade on, the morning line for it has become part of the SoHo streetscape. The flakier truth is that the Cronut is only the headline: the DKA (a caramelized kouign-amann), the frozen s'more, and the rotating seasonal pastries show a French-trained pastry chef who treats novelty as craft rather than gimmick.

The shop itself is small, with a handful of seats and a back garden that most first-timers miss. Go mid-morning on a weekday, take whatever just came out of the oven, and judge the famous thing against the quiet excellence of everything around it.

Editor’s tip

If the Cronut line is long, order the DKA instead — regulars will tell you it is the better pastry anyway.
